- Recipe
- 1 1/2 tbsp Ghee or clarified butter22 g
- 1/2 cup almond flour60 g
- 1/3 cup sweet sprinkle40 g
- 2 tablespoons of sour starch24 g
- 1/4 cup grated parmesan cheese25 g
- 1 egg1 unit(s)
- 1 pinch of salt0.5 g
- Separate the butter and take it to the fridge. She needs to be hard to wrap around the dough. In a bowl, place the almond flour and salt. Mix with pieces of the well-chilled butter, using your fingertips to form a wet dough.
- Add the sour sprinkle, and then the grated cheese. Open a "little hole" in the dough, and add half the sweet sprinkles, and half the egg (beaten to mix white and yolk).
- Mix well to incorporate well, and add the rest of the egg and sweet sprinkles.
- ´´It is important to pay attention to the texture of the dough, so as not to add too much egg. The result is a soft dough that does not stick to the hand.
- Make balls of 4g on average, brush with egg and sprinkle grated cheese on top. Take to bake in preheated oven at 180°C for 10 to 12 minutes. If you have the "golden" function in your oven, you can turn it on in the last few minutes of baking, so that they are golden brown.
- Tip: You can open the dough with a rolling pin, and use cutters to standardize the weight of your little ball, as in the photo.
