- Avocado or avocado (if an avocado use 1/4)1/2 unit(s)
- Eggs2 unit(s)
- Balsamic Acetate1/3 cup
- Cherry Tomatoes to taste
- Olive oil to taste
- Salt and Black Pepper to taste
- Lemon1/4 unit(s)
- Mash the avocado and add drops of lemon so it doesn't brown, set aside
- In a small saucepan, add the balsamic vinegar and bring to a boil over low heat until the volume is reduced by half. Remove from heat and let cool. Be careful not to burn, it's fast
- In a frying pan add a drizzle of olive oil, brown the bread on both sides over medium/low heat.
- In a skillet, make the scrambled eggs. In a bowl beat the eggs. Add a drizzle of olive oil, eggs, salt, and stir constantly. Remove from heat periodically and continue to stir. The lower the heat and the slower the process, the creamier they will be.
- Cut the tomatoes in half and season with salt and pepper.
- Assembly: on the toasted slice of bread add the mashed avocado, place the scrambled eggs on top, finish with the tomatoes. Drizzle with a drizzle of olive oil and the reduction of balsamic vinegar.
