- Mashed banana1/2 unit(s)
- Egg1 unit(s)
- Oat flour30 g
- Plain or Greek yogurt4 tablespoon
- Berry Jam2 tablespoon
- Yeast1 teaspoon
- Vanilla Essence to taste
- Sweetener to taste
- In a large microwaveable bowl or mug, place the mashed banana, egg, oat flour, 2 tablespoons of yogurt, vanilla extract, sweetener and baking powder. Mix well and microwave for 3 to 3min and 30s.
- Expect to cool down and with the help of a knife, release the sides of the cupcake to unmold. Top with 2 tablespoons of Greek yogurt and berry jam.
- Tip: it can be made the night before and left in the fridge for your breakfast to be ready. There's a recipe for yogurt and Red Fruit jam here on my profile. They are very easy and delicious!!
