- Chickpea flour1/2 cup
- Brown rice flour1/2 cup
- Cream cheese200 g
- Chia1 tablespoon
- Eggs4 unit(s)
- Mozzarella100 g
- Fine herbs1 tablespoon
- Baking powder1 tablespoon
- Start by preheating the oven to 180 degrees. In a blender, beat the eggs with the cream cheese and 60g of mozzarella until smooth. Add the chickpea and brown rice flours and beat some more. Turn off the blender, add the yeast and just stir gently. Pour half of this dough in a medium greased with coconut oil or olive oil. Put the rest of the mozzarella and spread the fine herbs on top. Pour the rest of the dough over the stuffing and the chia on top to finish. Bake in the oven for about 30 minutes or until golden on top.
