- grated carrot1/2 unit(s)
- Cream of chestnut (or ricotta)2 tablespoon
- Mayonnaise2 tablespoon
- Olive oil2 tablespoon
- Seasonings1 to taste
- Mix the carrot with the cashew nut cream, mayonnaise, olive oil and seasonings (I used dried pepperoni and a pinch of turmeric). Stir well until incorporated, taste and add salt if necessary (do not add before because both mayonnaise and cashew nut cream / ricotta have salt).
- Open the blanket and leave it on top of the plastic itself (it makes rolling easier). Add a generous portion of stuffing and roll up the blanket (like a roulade). If desired, let it rest in the fridge for 1 hour to set the filling (optional).
