- orange sweet potato1 kg
- Parsley02 tablespoon
- Olive oil01 tablespoon
- Whole mozzarella cheese300 g
- Salt to taste
- Parmesan cheese for breading to taste
- Take the potatoes whole and with the skin on in the pressure cooker, when the pot starts to sizzle, leave it on the fire for another 10 minutes, then turn off, drain and wait for it to cool. After cooling, remove the potato skins and mash, add the oil, salt and parsley.
- Cut the mozzarella into small cubes.
- Take the amount of 1 dessert spoon full of the dough, knead it in your hand until you make a circle, put the mozzarella in the middle and wrap it up making a ball, pass the ball in the Parmesan cheese and put it on a baking sheet. Repeat this process until all the dough is used up.
- After rolling all the dough, take the cheese balls to the oven preheated to 180 degrees for 10 minutes so that the mozzarella melts and the parmesan gratin.
