- 200 g shredded chicken (cooked in salted water or chicken broth)200 g
- 1 tablespoon of oil1 tablespoon
- 1/2 onion, chopped or grated1/2 unit(s)
- 3 cloves of minced garlic3 unit(s)
- 1/2 cup tomato sauce1/2 cup
- 1 cup chicken cooking water1 cup
- 1 tablespoon of butter1 tablespoon
- 1 cup of wheat flour1 cup
- 1 tablespoon of chopped parsley1 tablespoon
- 1 salt to taste1 dessert spoon
- 1 dessert spoon of black pepper to taste1 dessert spoon
- FOR BREADING, 1/2 cup of water or milk, breadcrumbs1/2 cup
- Put the oil in a pan, heat and brown the onion.
- Add the garlic and sauté a little more.
- Add the shredded chicken, tomato sauce, salt and pepper to taste.
- Sauté for a few seconds and turn off the heat, add the parsley and mix.
- Remove the chicken stuffing from the pan, reserve it in a container and place in the same pan (which you used to make the chicken) the water from the cooking of the chicken, the butter and the salt.
- Bring to a boil. Reduce the heat and add the wheat flour all at once, stirring quickly to mix well with the liquid, until you get a homogeneous mass.
- Cook for a few minutes, stirring constantly until the dough comes away from the bottom of the pan.
- Transfer the dough while still warm to a bowl or table and knead a little until it is smooth and homogeneous.
- Add the chicken stuffing and mix well with the dough.
- MODEL THE CROCKETS.
- Quickly dip the croquettes into the water or milk.
- Then pass the croquettes in the breadcrumbs.
- Fry in very hot oil until golden.
