- method of preparation In the blender, beat the chickpeas in the vegetable milk with the salt, the seasonings and a tablespoon of olive oil. Let it beat until it forms a thick mass with a certain texture. Cover a frying pan with plenty of olive oil and the ingredients you are going to use, such as onion and sliced tomato. Pour the chickpea paste over the ingredients. Spread well with the spoon and cover with a lid. Keep the heat low for about 3 minutes and then turn the omelette to brown the other side. When you feel it's golden and cooked on both sides, just serve.
