- Cod500 g
- Potato700 g
- Eggs2 unit(s)
- Chopped Parsley1 unit(s)
- Oil for frying1 to taste
- To desalt the cod, place it in a large container and cover with water and ice cubes. Leave it in the fridge for two days changing the water and ice twice a day.
- Cook the potatoes until they are very soft. Squeeze or mash with a fork as if you were going to make a puree. Reserve.
- Place the cod fillets in a pan, cover with water and cook over low heat until cooked through, about 20 minutes. Wait for it to cool, place the cod in a clean cloth and press it well with your hands until it is completely shredded.
- In a container, place the cod, potato, eggs and parsley and mix everything until it becomes a homogeneous mass. Make dumplings and fry at 160°C or medium heat. Drain the dumplings on paper towels and serve with lemon, olive oil and a good wine.... -
