- Previously desalted cod400 g
- Milk to taste
- Wheat Flour125 g
- Egg1 unit(s)
- Cold water200 ml
- Salt to taste
- Black pepper to taste
- Sunflower oil300 ml
- Olive oil (not extra virgin)300 ml
- With your hands, break the cod into flakes and let it soak in enough milk to cover for about two hours.
- Finely chop the onion.
- Drain the cod's milk, discarding it.
- Make the fritters dough by mixing the flour, egg and ice water. Season the dough with salt and pepper.
- Put the oil and olive oil in a pan and heat to about 170ºC.
- Mix the cod in the dough. Take a good spoonful of the dough and carefully pour it into the hot oil. Repeat with other spoonfuls to form more fritters. Fry about 5 fritters at a time, so as not to overfill the pan and cool the oil temperature. When they are well golden, remove the fritters with a slotted spoon and drain on a paper towel. Serve immediately.
