- Butter with salt5 tablespoon
- Whole milk or sour cream1/4 cup
- Chopped cheddar cheese1/4 cup
- Handful of salt to taste
- Bacon (optional) to taste
- Preheat the oven to 200°. Clean and dry the potatoes, then pierce several times to allow steam to escape and lightly coat with 1 tablespoon of butter to make the skin crispy.
- Place directly on the baking sheet and in the middle of the oven for about 1 hour or until tender by checking with a knife.
- With the potatoes ready, run each one in half lengthwise and gently pour the insides into a bowl, leaving the skins intact.
- Add the remaining 4 tablespoons of butter and the cream or whole milk, cheddar cheese, and salt, mashing like a mashed potato.
- Collect the crushed stuffing and return it to the potato skin.
- Lower the oven to 180° and arrange the stuffed potato halves on a baking sheet.
- Place the potatoes in the oven for about 15 minutes or until they start to brown on top.
- Optionally, some chopped bacon can be added to the filling before filling in the shells.
