- Extra salted butter cut into cubes115 g
- Brown sugar100 g
- Refined sugar75 g
- Large egg1 unit(s)
- Coffee extract2 teaspoon
- Unleavened Wheat Flour185 g
- Corn starch7 g
- Chemical Baking Powder3 g
- Semisweet chocolate, chopped or in drops250 g
- Fleur de sel for sprinkling to taste
- Preheat your oven to 180°C.
- Sift the wheat flour, starch and yeast. Mix well and set aside.
- Melt the butter until it takes on a brownish color, this will happen in about 4 minutes over low heat, stirring constantly so it doesn't burn. Once it reaches that color, transfer it to a bowl and let it cool for about 3 minutes.
- In the same bowl, add the sugars and mix well. Then add the egg and coffee extract, homogenizing everything.
- Add the dry ingredients to the dough. You don't need to completely homogenize.
- Add the chocolate chips and then mix until everything is completely homogenized.
- Make portions/balls with the dough (an ice cream extractor helps a lot at this point) and place them on a baking sheet covered with parchment paper. Take this form to the fridge for at least an hour before baking (you can let it “age” in the fridge for up to 5 days before baking. The older the cookies, the tastier the cookies will be)
- Bake in the oven until the edges are golden brown, about 15 to 20 minutes. Beyond that, your cookies can become dry and hard. Sprinkle with fleur de sel, serve them with milk and enjoy!
