- Break and mix the two eggs gently, seasoning with salt and pepper.

- Keep the heat low and pull the parts that have already coagulated to the sides, making sure that the still raw egg is in contact with the bottom of the skillet.
- Add a slice of mozzarella cheese and roll the omelet until it is completely closed.
