- Extra Virgin Olive Oil1 tablespoon
- Fine herbs (oregano, rosemary and sage)1 dessert spoon

- Peel the potatoes and take one of them to cook.
- Grate the second potato and place on a paper towel to absorb moisture and set aside.
- At the same time, mix the egg and tapioca starch in a bowl until it forms a doughy mass.
- Add the grated potato to the dough and mix well and set aside.
- Take the boiled potato and mash it until it forms a puree.
- Mix the puree to the previously prepared mass, incorporating the mixture well.
- Season the mixture with salt, pepper and fine herbs.
- Grease a frying pan with olive oil and add the mixture
- Wait for pancake consistency and turn with the help of a spatula. Once both sides are golden, it's ready.
