- Organic Dry Yeast5 g
- Demerara sugar2 teaspoon
- Warm water1/4 cup
- warm milk1/4 cup
- Wholemeal or white flour360 g
- Extra Virgin Olive Oil1 tablespoon
- Salt1 teaspoon
- Stuffing (choice) to taste
- Mix the first 4 ingredients and set aside for 5 minutes.
- In a bowl, mix the flour and salt and add the reserved yeast mixture. Add the oil and start kneading the dough.
- When the dough is smooth and does not stick to your hands, divide it into 6 equal parts. Shape the portions into "balls" and let it rest for 30 minutes.
- After the dough rests, with a rolling pin, open each portion into a very thin circular dough (the more ends, the crispier). Bake the dough in a preheated oven (at 250 degrees) for about 3 to 5 minutes. Doughs should not be fully baked right now. They must be pre-baked.
- Stuff the pasta with the stuffing and sauce of your choice and return them to the oven (at 200 degrees) until they are fully baked.
