- In a bowl put the milk and vinegar. Let the milk with vinegar curdle for about 5 minutes [you will notice that the milk will become thicker]. I like to use vinegar because the 'milk + vinegar' mixture is a substitute for BUTTERMILK: and that makes the dough much fluffier, trust me
- Melt the butter and let it cool. Meanwhile, separate the eggs, beat the egg whites and set aside
- Add the vanilla, egg yolks and melted butter to the milk and vinegar mixture [or buttermilk] and mix well with a whisk.
- Sift the flour, baking powder, bicarbonate, sugar and salt into the previous mixture and stir with a whisk: you don't need to mix too much, just until you realize that the flour has already added to the mixture – even if there are some lumps, it's okay . The less you hit, the fluffier the dough is. The act of sifting the flour is also important here in this recipe, as this way we add even more air to the dough.
- Now add the egg whites and mix gently. Let the dough rest at room temperature for 10 to 15 minutes.
- Cook them in the waffle iron for about 7 minutes or more if you prefer them more toasted. Serve still warm with your favorite topping!
