- Wheat Flour500 g
- Yeast5 g
- Water380 ml
- Salt to taste
- Rosemary to taste
- Olive oil20 ml
- Let's start with the sponge, put 5g of biological yeast, 100g of wheat and 100ml of water, stir, cover and set aside
- After 35min, add this sponge to 400gr of wheat, 10gr of salt and 280ml of water and 20ml of olive oil
- With this dough well hydrated, we will make folds every 5 minutes.
- After the 4th fold it has already created elasticity and developed well
- Now we are going to make only 1 fold and let it grow between 45min and 1h.
- Place on a baking sheet, place your topping (here I used rosemary and coarse salt and more olive oil) for 25min at 200 degrees if your oven is gas, set to 250
