- For dough: Let's start by making the sponge for our cuca. In a bowl, place the yeast, sugar and warm water. It is important that the water is lukewarm to activate the yeast. It can't be too cold or too hot if it doesn't kill the yeasts. Leave covered with a cloth for 15 minutes, in a warm place, until it forms a sponge (a bubbly mass) In a bowl, combine the flour with the salt and mix. Heat the milk so that it is warm. In a mixer with the Hook (if you don't have it, you can beat it by hand too), put the sponge first, followed by the eggs, the butter at room temperature. Beat on medium speed for 1 minute. Then add ⅓ of the flour, ⅓ of the milk. Beat until incorporated, and continue in the same proportion until the ingredients are used up. Beat on medium speed for another 5 minutes until the dough is smooth. Grease a pan with butter and spread the dough all over the pan. It's elastic, so take your time. Cover with a damp cloth and let rise for 1 hour in a warm place.
- for farofa Place the wheat flour, granulated sugar, lemon zest, baking powder and cinnamon in a bowl. Mix. Add the cold butter, and press the flour with the butter until it looks like a crumbly dough. Reserve.
