- Mozzarella cheese to taste
- Ham to taste
- Parsley to taste
- Pepper to taste
- Salt to taste
- Olive to taste
- Pre-cook the potatoes and leave them al dente, leave them very firm. When the fork comes in, it's ready. Give the ice water a thermal shock to stop the cooking. Let it cool down.
- Grate the potatoes on a coarse grater. Season to taste!
- In a non-stick frying pan, put a little oil and add half of the potato as if it were a pancake.
- Add the coarsely grated mozzarella cheese and finely chopped ham, and chopped olives for those who like it, lol
- Cover with the rest of the potato and let it fry for a few minutes, when it's golden on the bottom it's time to turn and let the other side fry for 2 or 3 minutes.
- Transfer to a plate and sprinkle with parsley! Ready!
