- Break the eggs and place in a bowl, stir well with a fork until the whites and yolks are mixed.
- Place a non-stick pan over low heat and add the butter, wait for it to melt.
- Add the eggs and mix with a spatula. Take them off the heat, keep stirring, return to the heat. The idea is to keep them creamy by cooking slowly.
- When the eggs are coagulated, but still creamy, you can turn off the heat. Season with salt and pepper to taste.
