Lentil appetizer with pistachios

- Raw Lentils400 g
- Water1 l
- Olive oil1/2 cup
- medium chopped onion1 unit(s)
- Minced garlic2 unit(s)
- Cumin1 teaspoon
- Chopped Mint2 tablespoon
- Pistachio2 tablespoon
- Lemon juice2 tablespoon
- Thyme1 coffee spoon
- Salt and pepper to taste
- Wash the lentils well and place them in a large pot of cold water. Add the thyme, salt and pepper. When boiling, cook for 20 minutes over medium heat. Reserve a cup of the cooking water. Drain the lentils and set aside. Saute the onion with 3 tablespoons of oil. Let it brown. Add the minced garlic. Sauté for a minute and add the lentils. Stir well and add half of the cooking water. Let it boil, and turn off the heat. Beat (preferably in a blender) the lentils, cumin, the rest of the water and 2 tablespoons of olive oil. Transfer to a container and season with lemon juice, mint, salt and pepper. Serve warm or at room temperature. Drizzle with a little olive oil before serving and sprinkle with pistachios and use mint leaves to decorate. Good appetite 😋😋
