- Soybean oil1 cup
- lard2 tablespoon
- Margarine1 tablespoon
- Warm to cold water1.1/2 cup
- Crystal sugar3 tablespoon
- Salt1 tablespoon
- Stuffing: Duckling meat, ground 2 times800 g
- Large onion cut into small cubes1 unit(s)
- Seedless tomatoes cut into small cubes4 unit(s)
- Chopped Mint to taste
- Black pepper to taste
- Tahiti lemon5 unit(s)
- Salt to taste
- How to make the dough In a bowl place the flour, (put only 800 grs) make a well and inside the sugar the salt, the oil, the yeast dissolved in the warm water ,( let it rise for 10 min.
- Add the eggs to the lard, the margarine, now hands to work, mix from the outside to the inside incorporating all the ingredients, knead the dough well until it releases from the hands, if necessary add more flour.
- You will notice that bubbles will form in the dough as you knead, at this point make balls for small sfihas or large balls for large ones.
- Mix all the ingredients and let it rest until it's time to make them. Makes 120 small sfihas plus or minus 30 large
- Stuffing preparation method
- Place the ground duck meat on a platter along with all the seasonings and squeeze the lemons mix well and set aside (a tip make the stuffing before the dough this speeds up the final process)
- After about 20 minutes, drain all the liquid that has formed, if you need to, squeeze between your hands to remove the excess.
- The lemon gives the meat a pre-cooked with the seasonings.
- And it will be ready to fill your beads, make them either open or closed according to your wishes.
- The meat roasts together with the pasta without needing to cook it beforehand.
