- Sugar or sweetener1 tablespoon
- Softened Butter1 tablespoon
- Natural yogurt or coconut milk3 tablespoon
- Grated dry coconut4 tablespoon
- Flour (wheat, oat or coconut or Amaranth flakes)2 tablespoon
- Baking powder1 coffee spoon
- Beat well with a fork; the egg, the sugar, the yogurt/milk. Until it's creamy.
- Add the dry coconut, flour and yeast. Mix well.
- Place in a large cup/ramekin, microwave for 1 minute at a time until firm.
- Optional syrup: 2 tablespoons of powdered milk + 3 tablespoons of coconut milk. Mix well and pour over the cupcake.
