- Bacon300 g
- Mustard100 g

- Cabbage to taste
- Minas semi-cured cheese600 g
- Salt to taste
- Corn burger buns8 unit(s)
- Cut the ham and bacon into cubes. Mix and pass through the grinder. (you can also grind using the food processor or hit the tip of a knife)
- Add the salt, mustard, the juice of the 2 lemons and mix until obtaining a homogeneous mass.
- Separate "balls" with 180g, throw them from one hand to the other to compact.
- Model in a circular shape with a thickness of 2 cm. (You can use your hands or a stainless steel rim). Reserve.
- Remove the skin from the bacon, cut into cubes and fry in hot oil. Reserve.
- Cut cabbage leaves very thin and sauté in a frying pan with salt and butter. Reserve.
- Grill the burgers in the skillet, griddle or grill for 5 minutes on each side, or until you get the desired doneness.
- Assemble the buns with lettuce, tomato and mayonnaise. Add the hamburger and the melted half-cured cheese. Place the sautéed cabbage and finish with cubes of fried bacon. . I visited a cheese production that is considered the best in the state, learned a little about Minas Gerais culture and transformed this experience into a typical Brazilian hamburger. .
