- Canned corn1/4 cup
- Egg1 unit(s)
- Coconut oil2 tablespoon
- Cornmeal1/4 cup
- Milk3 tablespoon
- Demerara sugar1 tablespoon
- Baking powder1 teaspoon
- Grated coconut and fennel (optional) to taste
- Blend all ingredients in a blender, except for the yeast and the optional ones, until smooth.
- Mix the other ingredients by hand and bake in silicone molds, cupcake machine, mini cakes in the oven or airfryer until golden. It can be roasted in a mug in the microwave too!
