- Fine rolled oats or oat flour3 tablespoon
- Ripe banana1 unit(s)
- Cinnamon (optional) to taste
- Sweetener or Sugar to taste
- Mash the banana until it turns into a "cream".
- Add the egg with the banana and mix well.
- Add the oats, cinnamon and sweetener. Mix everything until it becomes a cream.
- In a non-stick frying pan or with a drizzle of olive oil, pour the mixture into small portions (the size of the pancake is up to you). Keep the heat low so the pancake cooks without burning. When golden, turn and let the other side brown.
- Suggestion: Serve with honey, karo syrup or jam. I also like to put fruit on top to decorate.
