- Wheat Flour250 g
- Organic Dry Yeast7 g
- Water150 ml
- Olive oil4 g
- Salt4 g
- Brown Sugar15 g
- Cumin1 g
- Onion100 g
- Butter10 g
- Make the poolish (part of the flour + water + yeast). Cover with plastic wrap and let it ferment in a warm and/or dark place (inside the microwave) for about 30min.
- Saute onion in butter.
- Add the dry ingredients, open a crown and add the still hot butter and the poolish.
- Knead well until it becomes a smooth dough.
- Boil 50g and let it ferment for 50 minutes.
- Place in a greased shape and brush with egg and water.
- Bake in a dry oven at 180° until golden.
