- Orange Juice1 cup
- Egg2 unit(s)
- Canola or Sunflower Oil1 cup
- Dried Apricot1/2 cup
- Wheat Flour1 cup
- Coconut Flour1/2 cup
- Baking powder1 tablespoon
- Chop the apricots, let them soak in hot water for 20 minutes, then mash them with a fork until they become a paste and set aside.
- With the help of a whisk, beat the eggs well until pale, add the oil and half of the apricot and beat for 3 minutes. Add the flour and orange juice (I used Bahia because it has more broth) mix well until they are incorporated, add the rest of the apricot and finally the yeast. If you want you can put a few extra pieces of apricot in the middle of the dough which is delicious. Arrange in cupcake molds and bake in a preheated oven for 30 minutes at 180 degrees.
- ♻️ you can replace the flours, if you prefer you can use all wheat or oat flour, and for those who don't like apricots, you can use white raisins and for those over 2 years old you can replace the apricot with the same measure of demerara or brown sugar .
