- Skinless Peanuts2 cup
- Sugar4 tablespoon
- Cinnamon1/2 teaspoon
- Salt1/2 coffee spoon
- Toast the peanuts in the oven at 180°C for about 25 minutes, until golden.
- Place in food processor and process for 15 minutes, stirring occasionally, to process evenly. It has to be creamy.
- You can sweeten it with crystal, refined, brown, demerara sugar or if you prefer, you can not sweeten it. I loved it with 4 spoons of granulated sugar, more to your taste. I added cinnamon, also optional, and 1/2 teaspoon of salt, to enhance the flavor. Process until well mixed and transfer to a glass jar or one of your choice.
- Optional: you can reserve 1 cup of peanut coffee and process until it turns into crumbs and mix it into the paste.
