  • Flour500 g
  • Lard or olive oil130 g
  • Water170 ml
  • Salt1 tablespoon
  • Baking soda1 teaspoon
  1. In a bowl, mix all the ingredients and knead to form a ball. Cover with plastic wrap and let it rest for 30 minutes. Knead some more, roll the dough into a thick sausage shape and cut into five pieces.
  2. Shape each piece into a ball, cover and let stand for 30 minutes. Open each piece into a thin round disc. Fry the skillet for 2 minutes on each side until the discs are slightly charred. Put the stuffing of your choice and fold it like a sandwich.
  3. Filling: Stracchino cheese (or your favorite cheese) Raw ham Arugula
