- English Potato1/2 kg
- Grated Parmesan Cheese3 tablespoon
- Butter1 tablespoon
- Gems2 unit(s)
- Wheat flour to taste
- Oil for frying to taste
- Whole eggs3 unit(s)
- Black pepper to taste
- Salt to taste
- Cook the potatoes, unpeeled, in plenty of water. Peel and pass, while still hot, through the juicer.
- Add to the potato mass, two egg yolks, the cheese and the butter.
- Mix quickly and season with salt and pepper. Always stirring, add wheat flour little by little, until you get a well-connected dough and consistency that you can roll.
- Take small portions of the dough and, with lightly floured hands, roll up the croquettes.
- Roll in breadcrumbs, beaten eggs and again in breadcrumbs.
- Fry, gradually, in hot oil, place in a bowl with paper towel to get dry.
- Serve then.
