- Oregano to taste
- Cook the potatoes until soft
- Cut the potatoes in half and carefully remove the core so as not to rescue the skin. And reserve the brains
- Remove the skin from the sausage and crumble the sausage, put it in a frying pan and fry
- Mix the potato brains with the fried sausage
- Stuff the potato skins with the sausage puree
- In a form, place the potatoes and cover with mozzarella and sprinkle with oregano.
- Bake in the oven until the mozzarella melts.
