- Wheat flour240 g
- Brown sugar90 g
- Crystal sugar70 g
- Butter (unsalted)100 g
- Praline (your choice45 g
- Baking soda6 g

- Salt (pinch)1 g
- For the caramel. l
- Sour cream (above 20% fat)200 g
- Crystal sugar100 g
- Flower salt or pinch of salt to taste
- Cold butter70 g
- Cookie preparation method: Mix the sugars+butter and make a paste. Add praline, egg and mix. Finally, gradually add the flour, baking soda and salt. Make balls of 50g to 60g and distribute on a parchment paper or cooking mat. Bake for 10 to 12 min at 165°C
- How to make the caramel: Melt the sugar, add the warm cream and mix well. Be careful at this step! Cook up to 105°C. Remove from heat, emulsify the butter and fleur de sel. Set aside until you reach the texture for use.
