Whole milk

Ferva o leite com o suco de limão ou vinagre até parecer que a nata está se separando. Desligue o fogo.

Boil the milk with the lemon juice or vinegar until the cream appears to be separating. Turn off the fire.

Com a ajuda de uma peneira e um pano de prato limpo e seco vá retirando o excesso do líquido. Torça o pano mesmo pra ricotta ficar bem sequinha. 

With the help of a sieve and a clean and dry dish towel, remove the excess of the liquid. Wring the cloth to make the ricotta very dry.

Pode temperar a ricota com ervas frescas que fica uma delícia.

You can season the ricotta with fresh herbs which is delicious.
