- Arugula (a few leaves) to taste
- Dijon Mustard2 tablespoon
- Honey1 tablespoon

- Vinegar250 ml
- Salt and Black Pepper to taste
- Olive oil to taste
- White cheese (optional)100 g
- Butter the buns and place in the skillet to lightly toast.
- Prepare the sauce by mixing the mustard, honey, a drizzle of olive oil, salt and pepper and spread over the buns.
- Place the pear slices (squeeze a little lemon juice to keep from browning), put some slices of white cheese, a little more sauce, some arugula leaves and on top, the roast beef.
- Poached Egg: Crack the egg into a bowl and set aside. Boil the water with the vinegar, lower the heat, stir the water until it forms a whirlpool and add the egg. Cook for 3 minutes and place in cold water.
- Place the poached egg over the arugula and season with a little salt and pepper.
