- fine corn flour / cornmeal150 g
- wheat flour50 g
- chilled unsalted butter50 g
- grated parmesan cheese40 g
- olive oil2 tablespoon
- oregano2 teaspoon
- egg1 unit(s)
- water (approx)1/2 cup
- In a bowl place the wheat flour and corn flour, add the Parmesan cheese, oregano, salt and mix.
- Cut the butter into small cubes, place it inside the bowl and with your fingertips, rub the ingredients until the butter is completely integrated, obtaining a kind of crumbs.
- Then add the oil and the egg and mix well.
- Then start adding the water, put a spoonful at a time and integrate the ingredients, add it little by little because the amount can vary.
- Add enough to get a smooth, firm dough that doesn't crumble and doesn't stick to your hands.
- Flour the countertop and using a rolling pin, roll it out so it is very thin, approximately 3 mm.
- Cut the cookies in the desired shape, accommodate them in a greased shape, you can leave little space between each cookie, as they spread little.
- Bake them in a preheated oven at 200°C for approximately 15 minutes. They need to be really golden.
