- Diced cheese to taste
- Breadcrumbs to taste
- Eggs3 unit(s)
- Cut the sausages and remove all the meat inside them.
- Peel and cut the eggplant into very small cubes and add to the sausage and mix well, with your hands if needed
- Take a portion of the dough and open it in the palm of your hand and place a cube of cheese and then close the dough forming a ball.
- Continue the process until all the balls are finished.
- Pass the balls in a mixture of 3 beaten eggs and then pass in the breadcrumbs and then fry in very hot oil until they are well golden, remove and serve with the sauce you prefer.
