- Separate the whites from the yolks. Beat the egg whites with salt and pepper. With a spoon, mix the yolks.
- In a frying pan (I used 20cm non-stick) put a little oil and cover the bottom with the tomato slices. Keep the heat to medium.
- When the tomatoes start to soften, turn over and add the egg mixture. Leave on low heat until cooked. Add the cheese and oregano and let it melt. Remove from heat and finish with basil.
