- Corn dough (Flocão)1/2 cup
- Carne de sol (dried meat) in small strips100 g
- Diced red onion1 tablespoon
- Diced cherry tomatoes2 tablespoon
- Coalho cheese in cubes2 tablespoon
- Parsley to taste
- Salt to taste
- Hydrate the corn mass with filtered water (I usually leave it at least ten minutes). Be careful not to over-wet the dough. Also be careful with the salt in the couscous, remember that the meat and cheese are already very salty.
- Fry the sun-dried meat in butter (always remember to wash the meat before using it and depending on it, it is sometimes necessary to soak it in water due to the excess salt). Reserve
- Place the couscous in a small (single) couscous pan to cook until it reaches the correct soft texture.
- In a medium skillet, sauté the onion and cherry tomatoes in butter. Add the ground beef and set aside.
- Take the already cooked couscous and mix it with the sauté that is in the skillet. Add the curd cheese and parsley and stir well until all the ingredients are mixed. (Yes, the couscous will crumble because there is no starch to bind it, but that's how we want it, like a farofa).
- To model, I used a small dessert bowl. Unmold.
- Serve with more parsley and chives, if desired.
