- Boiled and mashed sweet potato1 cup
- Egg1 unit(s)
- Flaxseed Flour1 tablespoon
- Organic Yeast1/2 tablespoon
- Olive oil4 tablespoon
- Demerara sugar2 teaspoon
- Rice flour3/4 cup
- Sweet sprinkle1/2 cup
- Salt1 teaspoon
- Xanthan Gum1 teaspoon
- In a mixer, add the sweet potato, the egg, the flaxseed flour, the yeast, the oil, the salt, the xanthan gum and the sugar. Beat well starting at low speed, beat until you get a very homogeneous mass. Stop beating and add the rice flour and flour. Knead the dough well with your hands on a smooth, clean surface. When the dough is no longer sticking to your hands, it is ready to shape. Mold into balls of the size you prefer. Or open small portions in your hand and fill as you prefer. Grease and flour a form, distribute the loaves leaving a small distance between them. Take the dough to rest in a warm place, let it double in size. Brush an egg yolk or butter over the buns. Then just take it to bake in a preheated oven at 180 degrees for approximately 40 minutes. Serve!!
