Sweet potato bread with Serra da Estrela cheese

- Cooked medium sweet potato2 unit(s)
- Egg1 unit(s)
- Ghee butter or regular butter at room temperature2 tablespoon
- Salt1 dessert spoon
- Sugar3 tablespoon
- Organic Yeast5 g
- Wheat flour3 cup
- Milk at room temperature100 ml
- Serra da Estrela cheese (or other cheese of your choice)100 g
- Beaten egg1 unit(s)
- Cook the sweet potatoes in the pressure cooker for 10 minutes (count after it beeps). After the pressure comes off, remove the potatoes and let them cool until you can move. Remove the peel and knead (with them still warm)
- Place the sweet potatoes in a bowl and add all the ingredients for the dough (egg, butter, salt, sugar, yeast, flour and milk). Mix with a fork until the ingredients are incorporated, transfer the dough to a smooth and floured surface and work the dough, kneading for 10 minutes until it is a very smooth dough. Put it back in the bowl, cover with cling film and let it rest for 1 hour.
- Cut 12 squares and shape the balls. Open each ball and place 2 pieces of cheese in each one and then close. Let it rest again for another 1 hour (cover with a clean dish towel)
- Preheat the oven to 180 degrees, brush beaten egg over the buns and bake until golden (in my oven it was 23 min, but this can vary)
- Remove and serve warm! It's delicious!!
