- Hydrated Tapioca Gum1/2 cup
- Mozzarella cheese1 tablespoon
- Eggs2 unit(s)
- Diced Bacon2 tablespoon
- Salt to taste
- Fry the bacon and set aside.
- In the same skillet, make the scrambled eggs over low heat until creamy. Add the cheese, turn off the heat and stir.
- In a heated skillet, place the tapioca gum covering the entire bottom of the skillet, sift the gum if you prefer. After about 2 minutes, turn to cook the other side.
- Add eggs and bacon and your tapioca is ready! Note: measurements for a small frying pan.
