- Rice flour or other gluten free110 g
- Potato Starch đ„30 g
- Sweet starch oui u cassava starch20 g
- Xanthan Gum2 g
- Lactose-free butter70 g
- Vanilla Extract1 to taste
- Demerara sugar110 g
- *To make SouDough Cookies Add 60g of active gluten-free levain to the recipe.
- To make it with chemical yeast, add 2g to the recipe.
- If using levain, let the dough rest for an hour before kneading again and forming cookies.
- Mix the dry ingredients. Beat the eggs with the sugar and lactose-free butter (can be Ghee or coconut butter).
- Making a very homogeneous mass.
- Make balls and find them. Place the Cookies on a platter with two fingers space between them.
- Decorate with chocolate chips đ«đ
- Bake at 180 degrees until firm, about 15/20 minutes.
