- Zucchini2 unit(s)
- Carrot1 unit(s)
- Red onion1 unit(s)
- Leek1 unit(s)
- White raisins200 g
- Olive oil200 ml
- Parsley100 g
- Cumin1 to taste
- Salt1 to taste
- Black pepper1 to taste
- Thyme1 unit(s)
- Pre heat the oven to 180°
- Clean and cut all vegetables into cubes of equal size in brunoise
- Chop the onion and leek into smaller sizes
- Put all the ingredients in a baking dish
- Drizzle with olive oil, add salt, pepper, cumin, sprigs of thyme and the raisins
- Mix well so that all the vegetables are smeared.
- Bake in the oven for approximately 30 minutes, during which time open to stir.
- Remove from the oven, chop the parsley to finish
- Taste the flavors and, if necessary, adjust the seasoning according to your taste.
- Serve as an aperitif, canapé, side dish. As you wish! :)
