- Mix the yogurt and salt well;
- Place in a sieve lined with a clean cloth or coffee filter;
- Support the sieve in a bowl.
- Take it to the fridge and let it drain for 8 to 12 hours, it will drain all the whey;
- Remove the sieve from the fridge and transfer the cheese to a pot with a lid. Keep in the fridge for up to 5 days.
