- Skimmed milk0.5 cup
- Wheat flour1 cup
- Olive oil2 tablespoon
- Baking powder1 tablespoon
- Grated Parmesan50 g
- Salt to taste
- Pepper to taste
- Grate the zucchini and squeeze it well with a dish towel to drain the excess water.
- Add the lightly beaten eggs, milk, Parmesan cheese, salt, pepper, oil and wheat flour. Mix well and add the baking powder.
- Place in a bread pan or in cupcake or pie molds and bake in a medium oven for about 20 minutes.
- Tip: serve with a slice of white cheese!
