- Vegetable broth (or water)2 l
- Coconut Milk200 ml
- Ginger to taste
- Salt and Black Pepper to taste
- Garlic (cloves)3 unit(s)
- Cut the carrot and celery into medium pieces.
- Peel and cut the onion and garlic.
- Place all the ingredients in a pan, let it brown, then cover with water and bring to a high heat.
- When it boils, reduce the heat and let it cook for 30 minutes. Turn off the heat and transfer the soup to the blender. .
- Beat until smooth
- Return the soup to the pot, season with salt and pepper.
- Mix the coconut milk and let it cook on low heat.
- Serve with croutons or popcorn.
- Tip: this soup is also delicious served cold.
