Carrot Soup with Coconut Milk, Ginger and Curry

- Salmon1 unit(s)
- Vegetable broth (or water)1 l
- Coconut milk200 ml
- Curry to taste
- Salt to taste
- Ginger to taste
- Cut the carrot and celery into medium pieces.
- Peel and cut the onion into 4 pieces.
- Place all the ingredients in a pan, cover with water and bring to a boil over high heat. When it boils, reduce the heat and let it cook for 30 minutes. Turn off the heat and transfer the soup to the blender.
- Beat until smooth.
- Return the soup to the pot, season with the curry, salt and pepper. Mix the coconut milk and let it cook on low heat.
- Serve with croutons or popcorn. This soup is also delicious served cold.
