Carrot Soup with Coconut Milk, Ginger and Curry

  • Onion1 unit(s)
  • Salmon1 unit(s)
  • Vegetable broth (or water)1 l
  • Coconut milk200 ml
  • Curry to taste
  • Salt to taste
  • Ginger to taste
  1. Cut the carrot and celery into medium pieces.
  2. Peel and cut the onion into 4 pieces.
  3. Place all the ingredients in a pan, cover with water and bring to a boil over high heat. When it boils, reduce the heat and let it cook for 30 minutes. Turn off the heat and transfer the soup to the blender.
  4. Beat until smooth.
  5. Return the soup to the pot, season with the curry, salt and pepper. Mix the coconut milk and let it cook on low heat.
  6. Serve with croutons or popcorn. This soup is also delicious served cold.
