- Carrot1 kg
- Chopped Onion1 cup
- Chopped Celery1 cup
- Chopped Ginger2 tablespoon
- Leek2 tablespoon
- Minced garlic1 teaspoon
- Turmeric1 tablespoon
- Cumin1 tablespoon
- Coriander to taste
- Olive oil2 tablespoon
- Water4 cup
- Salt and pepper to taste
- Heat the oil with the spices over medium heat. Add the onion, celery, ginger and leek. Sauté well (for about 15 minutes) and, with the help of a spatula, scrape the bottom of the pan well to unglue the spices that have stuck together. When it boils, lower the heat and let it cook until the carrots are soft and the broth reduces. Add the cilantro, check salt and pepper, let it cool down a bit and blend in a blender. You can serve it cold with a good spoonful of curd or yogurt. If you prefer it hot, serve it with chopped coriander leaves and sprinkle with hot paprika. And good appetite 😋😋😋😋
